The Gschwindt family has been aging fine champagne by the method of classic bottle fermentation, largely on contract, since 1985.
In 1992 three brick vaults, each 30 m long and 7.5 m wide, were constructed parallel next to each other at ground level, covered with earth and renaturated so as to blend in harmoniously in the Duttweiler Wiesental valley.
Connected to each other by passageways, the vaults are divided into a champagne cellar, a storage cellar and a hall of knights in original style for dégustation sessions.
The love for craftsmanship, whether it be in the production of champagne or faithful reproduction of armour is tangible from the first look.
