Wine cellar construction with brick vaults for the vineyard Gantenbein.
In 1996 top winemaker Daniel Gantenbein from the Swiss town of Fläsch had the first brick vault barrique cellar measuring 5 x 35 m built for his Pinot Noir.
Ten years later, in 2006, the next extension was due:
A second brick vault, 5 x 10 m in size, became necessary for the vineyard's Chardonnay.
Daniel and Martha Gantenbein place great importance on traditional gentle methods of vinification. The wine should, for example, reach the vault cellar solely by the force of gravity. "Pumping disturbs the wine and has a negative influence on its quality," says Daniel Gantenbein. The wine rests in complete tranquillity and in the natural climate of the brick vault until it is ready for enjoyment.
The complete new wine cellar is an architectonic work of art. The lights in the multipurpose room produce, for example, a spectacular effect.
The symbiosis of tradition and modernity is an outstanding success. The wines of the Gantenbeins will in any event still arouse much interest in the future.
